Kate Torralba designs Valentine Couture Cake


Love is in the air and nobody knows it more than fashion designer Kate Torralba.

Cake Torralba. Fashion designer Kate Torralba infuses her sense of fun and romance into her very own couture cake.
Known for her colorful and whimsical creations, Kate Torralba has turned her romantic eye on pastries as she designs a Valentine Couture Cake exclusively for Hyatt Hotel and Casino. Called KT in Bloom, the cake is an intricate pile of pink ombre sugar formed into a rose in full bloom. The cake takes inspiration from the Greek legend where Chloris, the goddess of flowers, found the body of a nymph in the woods. Aphrodite, the goddess of love, gave it beauty while Dionysius, the god of wine, gifted it with a sweet scent and the sun god Apollo made it bloom. The result was the rose, a symbol of love, the unofficial flower of Valentine's Day, and also Kate's favorite flower. The sugar rose sits on a cake composed of a layer of vanilla sponge cake and white Swiss Felchlin chocolate mousse infused with assorted berries and white chocolate bits, finished with a sparkly pink chocolate coating. Cake Torralba The cake is very much a reflection of Kate's bubbly personality and her flair for the romantic. It is also a reflection of her palate. Kate took great pains to design a cake that was lovely to look at and even lovelier to eat.

"I'm very into white chocolate these days," she says. A bite of her signature cake reveals a soft sponge base balanced by a sweet, creamy white chocolate mousse and bits of white chocolate as a textural contrast. A mix of berries adds punch, turning what might have been a regular hotel cake into a pastry that perfectly caps off a romantic meal.
